You KNEW I’d be all over this food holiday, friends! I’ve already shared a bunch of holiday cookie recipes over the past few weeks to get your pumped for Christmas cookie season, but now the real fun begins. December means the countdown to Christmas is well underway! Less than 25 days left to do ALL THE HOLIDAY BAKING. If you haven’t started yet, you have no more excuses. It’s National Cookie Day after all!
What’s your favorite kind of cookie? If I HAD to choose, it would hands down be my Grandma’s homemade Chocolate Chip Cookies with Walnuts…no one can make them like her. But in reality, I think mine depends on what time of year it is. In the summer I love a good lemony shortbread; in winter I crave deeper flavors like molasses and ginger. Don’t get me wrong, I am not one to turn down a cookie ANY time of year…but there are just certain flavors and tastes that fit well with certain seasons and occasions!
Today’s cookie recipe is just perfect for Christmastime. It’s got everything you could ever want in a sweet treat. Chocolatey goodness. Rich, buttery flavor. Soft-baked texture. And so easy to make.
With less than 6 ingredients, these Cocoa Almond Cookies are some of the simplest holiday cookies you’ll make all season long….but also, some of the TASTIEST! It’s so amazing the flavors that simple, whole food ingredients can bring to a recipe. In this one in particular, the unsweetened cocoa lends its rich, bold taste making these extra chocolatey and fudgy, while the almond flour gives them a nutty and buttery flavor! Such a wonderful combination.
There are a lot of cookie recipes you could choose from to celebrate National Cookie Day, but I can promise, you will not be disappointed with this one!
Cocoa Almond Cookies

- Prep Time: 5 mins
- Cook Time: 10 mins
- Total Time: 15 mins
- Yield: 6 cookies

Ingredients
- 1-2 tbsp NuNaturals cocoa stevia syrup
- 1/4 cup unsweetened cocoa powder
- 1/2 cup Bob’s Red Mill almond flour
- 3 tbsp coconut flour
- 1/2 teaspoon baking soda
- ½ cup non-dairy milk
Instructions
- In a bowl, mix together, cocoa powder, almond flour, coconut flour, and baking soda. Add in non-dairy milk to form dough.
- Preheat oven to 350F. Line a baking tray with parchment
- Divide dough into 6 equal balls and transfer to the baking tray. Press down to flatten them into cookies. Bake for 10 minutes.
- Remove the pan from the oven, but keep the cookies on the pan until the cookies are cooled. If you try to remove the cookies immediately, they’ll break apart.
Vegan, gluten-free, grain-free, and sugar-free too…these Cocoa Almond Cookies are the nutty, chocolatey cookies that not only TASTE amazing, but are pretty darn good for you too! They’re less than 75 calories per cookie and since the batch only makes 6 in total, you can totally feel free to eat them all in one go. 😉 Haha…I know I did!

I love any peanut butter themed cookie the very best, but I love chocolate cookies too!!!! The buttery goodness of a cookie combined with ice cream is my favorite. I didn’t actually eat a cookie yesterday, but I did eat chocolate cookie dough icecream… Does that count? :o)

I love these cookies so much! I substitute two tablespoons of sugar free chocolate syrup for the stevia syrup and add additional liquid splenda. And for the coup de grace I add two tablespoons of sugar free chocolate chips. This doesn’t add much to the net carbs either! They are divine – a just about perfect sweet treat.
