For me, it’s usually something I haven’t had in a really long time or something from my childhood.
Most recently….I had a huge hankering (?gotta love that word choice) for sweet cornbread.

My mom always made cornbread muffins as a side at dinner with her famous chili or if we were grilling out. So whenever the weather starts to get warmer, I begin craving cornbread again! It just reminds me of warm evenings, sitting outside with my family on our deck and eating dinner. Jiffy boxed mix for the win! ?
Nowadays, I don’t have a lot of excuses to make random batches of cornbread, but with Easter around the corner and a family brunch on the calendar, I thought it would be a fun challenge to satisfy my craving and come up with a brunch friendly recipe I could contribute to the spread.
Enter….
Cornbread Donuts!
Subtly sweet, soft, and fluffy donuts baked to the peak of perfection and perfect for healthy carb option at your next brunch gathering.
Of course, I turned to my main man Bob to get some ingredient inspiration for this recipe creation! I’ve definitely upgraded from my Jiffy days and used Bob’s Red Mill Gluten-Free Cornbread Mix and Bob’s Red Mill Vanilla Whey Protein Powder to make these delicious donuts.
I love the Bob’s cornbread mix because it’s got clean, simple ingredients:
-whole grain cornmeal
-potato starch
-whole grain sorghum flour
-cane sugar
-whole grain corn flour
-tapioca flour
-baking powder
-sea salt
Gotta love the REAL foods and whole grains. Everything you’d use to make cornbread at home but already combined into a convenient mix.
The Bob’s mix makes the PERFECT base for these Cornbread Protein Donuts. But don’t take my word for it….try them for yourself!

Ingredients
70 grams (1/2 cup) Bob’s Red Mill Cornbread Mix
64 grams pumpkin (about ¼ cup)
40 grams Bob’s Red Mill Whey Protein Powder (or a vanilla whey protein)
½ cup liquid egg whites (about 113 grams)
Instructions
In a large bowl, mix all ingredients together until fully combined. Spray donut pan with cooking spray. Divide batter into 6 donut wells.
Bake at 350 for 12 minutes.
Notes
Make your own cornbread mix using:
-1 cup of Bob’s Red Mill Gluten-Free Oat Flour
-3/4 cup Bob’s Red Mill Fine Cornmeal
-2 teaspoons Bob’s Red Mill baking powder
–1/4 cup Bob’s Red Mill Cane Sugar
-1/4 teaspoon salt
Make these for a delicious Easter morning breakfast or brunch side and serve with whipped butter and raw honey. ?

We don’t have Bobs Red mill Products in the UK ( i’m sure) but I’l definitely look for alternative ingredients to give this a go
