A fun twist on traditional cornbread…cornbread in donut form! These sweet Cornbread Donuts are gluten-free, high in protein, and perfect for a unique addition to breakfast, brunch, or snacktime. Totally kid-friendly too!
70 grams (1/2 cup) Bob’s Red Mill Cornbread Mix
64 grams pumpkin (about ¼ cup)
40 grams Bob’s Red Mill Whey Protein Powder (or a vanilla whey protein)
½ cup liquid egg whites (about 113 grams)
In a large bowl, mix all ingredients together until fully combined. Spray donut pan with cooking spray. Divide batter into 6 donut wells.
Bake at 350 for 12 minutes.
Make your own cornbread mix using:
-1 cup of Bob’s Red Mill Gluten-Free Oat Flour
-3/4 cup Bob’s Red Mill Fine Cornmeal
-2 teaspoons Bob’s Red Mill baking powder
–1/4 cup Bob’s Red Mill Cane Sugar
