PALEO Pesto Bread

  • 2 cups Bob's Red Mill almond flour
  • ¼ cup psyllium husk powder
  • 1 tbsp baking powder
  • ½ tsp sea salt
  • 5 large eggs (beaten)
  • ¼ cup coconut oil
  • ½ cup warm water
  • 1 container of Bowery fresh basil leaves (.75 oz), finely chopped
  • ¼ cup nutritional yeast
  • 2 tsp garlic powder
  • 1 tsp red chili flakes
  • prepared dairy-free pesto, for topping
  1. Preheat the oven to 350 degrees F.
  2. In a large bowl, stir together the almond flour, psyllium husk powder, baking powder, and sea salt.
  3. Stir in the eggs and melted coconut oil, then finally the warm water.
  4. Fold in nutritional yeast, basil leaves, and seasonings. Mix until just combined.
  5. Transfer the batter to a well-greased loaf pan. Spread evenly throughout and then top with prepared pesto.
  6. Bake for 50 minutes. Cool completely before serving.
