Tonight was the first time a recipe from Clean Eating has been no bueno. For dinner my mom and I planned on making the Sweet and Hot Shrimp Taco’s. The recipe consisted of sauted shrimp, a cherry-jalepeno reduction sauce (I should have known right there), wrapped in corn tortillas with shredded carrot and radichio.
When I first looked at the recipe I thought it looked good and pretty unique for a weeknight meal. The sauce appeared to be more of a glaze that lightly coated the shrimp, but what we got was liquidy, thin, and lacking in the flavor department.
Nothing like what I’d expected. And to top it off,the corn tortillas were using (yes, even though the were ezekiel brand!) were a bit freezer burned making them dry and a bit stale tasting. Darn prefrozen breads!
Well, aside from that one kitchen mishap I did have a lot of good eats over the past few days:
The next 3 days should be full of wonderful foods as well, as I will be visiting the big apple!!! Tons of food, fun, and sightseeing to come!

And our hotel is right in the middle of Time Square!!! Can’t wait to take some night time picks of all the lights.
