Easy, healthy cookies that have no added sugars, are gluten free, and make for a perfect snack or after dinner treat! These simple cookies combine all the sweet and salty goodness of trail mix into a soft baked delight. Kids and adults can agree these cookies are delicious and nutritious.

This past weekend I was invited to my local Walmart to check out the unveiling of their upgraded gluten-free section.
They’ve always had options in the past, but now they are carrying several new lines and really make it a priority to cater to those with celiac disease.
Though I don’t have Celiac myself I do like a lot of naturally gluten-free foods! And a lot of my recipes end up being gluten-free without evening planning them that way because I like baking with gluten-free ingredients (hello coconut flour!).
The gluten-free diet is very popular right now even amongst people who don’t have the autoimmune disease so it’s nice to see a company going out of their way to accommodate the needs of the public at large.
I was invited to take a look around the store and sample some of their new products. One thing I noticed is that they have a specific ‘gluten-free’ foods section delineated within the baking aisle. However, gluten-free foods can be found throughout the store! In almost every aisle I saw gluten-free alternatives to the traditional products. Pastas, breads, cookies, crackers, bars! They had a lot for people to choose from. If I had Celiac I would definitely appreciate having some variety in my options at the store.
Another thing I liked was their focus on whole, real foods. Sometimes gluten-free alternatives can be questionable in terms of their nutritional content. But the brands that Walmart carried are all things I would feel comfortable having in my own house (ones like Quaker, Udi’s, Clif, and Nature’s Path!). I even saw some of my favorite bars.
When I go home, I was so inspired by my food filled afternoon that I decided to do some baking with the bars I picked up! Now I know what you’re thinking….”bars are already a snack…why bake with them?”. Well I thought it would be the perfect opportunity to show that naturally gluten-free foods and packaged ones both a have a place in someone’s diet who chooses to eat GF. The best of both worlds in one delicious treat.
These trail mix cookies are vegan, gluten-free (obviously), have no added sugars and only have FOUR ingredients! It can’t get any easier when you’re craving something sweet yet healthy at the same time. Plus they have peanut butter and chocolate….automatic win.
Four Ingredient Trail Mix Cookies
Ingredients (13 cookies)
- 2 ripe medium-sized bananas, mashed
- 1 cup quick oats
- 1/4 cup chunky peanut butter
- 1 Dark Chocolate Peanut Clif Trail Mix bar, chopped
Preheat oven to 350 degrees. Spray a cookie sheet with non-stick spray or line it with parchment paper. Combine mashed bananas with oats and peanut butter. Fold in chopped trail mix bar. Place the mixture by the tablespoonful on prepared baking sheet.
Bake for 12-15 minutes, until cookies are firm and lightly browned. Remove from cookie sheet and let cool completely on cooling rack.
I really like these cookies for adding to my post workout snacks because they have a great mix of complex carbs and protein! They’re also pretty low in calories so for someone who is on diet they could be a great option for a healthy dessert. Come to think of it, they could work for breakfast too! Cookies for breakfast? I’m in.
