Savory baked oatmeal bars that are high in protein and taste like mac and cheese! These Gluten-Free Mac and Cheese Baked Oatmeal bars are healthy, whole grain, and perfect for a quick breakfast or snack. Make them ahead of time to have on hand all week long!
I like the basic, traditional versions of this classic comfort food, but I am also not afraid of getting a little adventurous with it. Exhibit A…my Vegan Pork n’ Bean Mac and Cheese. Exhibit B…my Vegan Gluten-Free Mac and Cheese Cupcakes.
I fact I’m not afraid to get a little adventurous when it comes to ALL my food. I like savory baked bars, sweet n’ salty combos, and don’t get me started on baking with beans or vegetables. But sometimes, even some foods shock me!
Take Grainful’s Homestyle Cheddar Meal Kit for example.
You all know I am a fan of Grainful’s frozen steel-cut oat meals…they are great for quick snacks in between my meals and SO yummy. My favorite is the Tuscan Bean & Kale one! I had yet to try their Meal Kits yet, however. When I saw that they had a Homestyle Cheddar version (AKA mac n’ cheese, basically!), I had to try it!
But knowing me and my penchant for creativity in the kitchen, I wasn’t just going to prepare them as the directions said. Instead I decided to make SAVORY steel-cut oat bars….mac and cheese flavor! I’ve made savory snacks in the past. See here and here. Never anything like this, though.
The bars would be naturally gluten-free since Grainful’s products are certified GF, but I also wanted to make them high in protein and low in fat if possible. Who says mac and cheese can’t be satisfying AND healthy!?
Here’s what I came up with…
Gluten-Free Mac and Cheese Baked Oatmeal
- Prep Time: 5 mins
- Cook Time: 30 mins
- Total Time: 35 mins
- Yield: 4 large bars
- 1 package Grainful Homestyle Cheddar Steel Cut Oats Meal Kit
- 1 tbsp potato starch
- ½ cup liquid egg whites
- 1 cup unsweetened almond milk
- Preheat oven to 350. Stir dry ingredients together. Mix in egg whites and milk. Stir until combined. Spray an 8×8 baking square cooking spray. Pour in baked oatmeal mixture. Bake for 30 minutes, stirring after the first ten minutes of cooking. Cool before slicing and serving. Serve cold or warm!
Soft, chewy, and SO CHEESY. These bars allow you to have mac and cheese ON THE GO. How awesome is that!? They are high in protein from the egg whites, full of calcium and vitamin D, and deliciously easy to make for quick snacks or savory breakfasts.
They’d even be fun to take to summer potluck or BBQ! Someone usually brings mac and cheese anyways, so why not bring mac and cheese bars? Easier to serve AND eat.
Grainful also has three other Meal Kit flavors: Madras Curry, Jambalaya, and Tomato Risotto. I feel like ANY of them could be swapped in for the Homestyle Cheddar in this recipe and make for a totally delicious savory baked oatmeal. Hmmm, maybe I’ll have to experiment with the other flavors soon! I’ll let you know how it goes. 🙂
