A healthy take on a carb-filled favorite! Ranch-flavored, creamy tasting biscuits with the added softness of potatoes and the doughiness of gluten-free oat flour. The perfect addition to your holiday table or dinner menu for the week!
We’re two weeks into fall so it’s totally acceptable to start cooking ALL THE COMFORT FOODS, am I right? 🙂
I say yes! When I think comfort food, I think CARBS. More specifically bread and potatoes. There’s nothing better than tucking into a big bowl of warm, homemade mashed potatoes (or sweet potatoes!), slicing into a freshly baked loaf of nutty, whole grain bread, or hearing the crisp from your first bite of cinnamon toast!
Carbs are so good. In fact, if I had to choose a favorite macro-nutrient I would have to choose them as my numero uno. Sure I love me some protein and healthy fats, but when I have cravings, it’s always for carbs. Maybe it’s the italian in me or maybe it’s just because I can appreciate a well made, potato-filled dish, but either way: I am a carb lover for life. I really need to get the ‘I LOVE CARBS’ shirt that one of my favorite youtubers wears in his videos. (Anyone familiar with Erik the Electric?)
Like I said, my go-to carbs are bread and potatoes. Usually I have one or the other with a meal, but in a recent moment of decision when I couldn’t make up my mind between the two, I had a BRILLIANT idea. Why not COMBINE them?!
I’ve done a ton of ‘dessert doubling‘ in the past, so why not do some ‘carb combining’. As a carb-lover, I had to go with this train of thought.
Unfortunately, my great idea came to a halt when I realized we were out of potatoes. Literally none in the house! If you know my family, this is a RARE occasion (my mom has a habit of over buying potatoes). But then I remembered that I had some Idaho Spuds Flavored Mashed Potatoes sitting in my pantry just waiting to be used up in a creative way Idaho Spuds come in five downright delicious flavors that make a great plus one for the holidays. The Creamy Ranch flavor sounded delightful and since they’re naturally gluten-free, I decided to stay gluten-free with my creation and combine them with oat flour.
A few shakes, pours, and dashes of some other yummy ingredients later and I had a pillowy, soft dough that was screaming to be sliced into biscuits.
So that’s what I made…Gluten-Free Ranch Potato Biscuits! Perfect for a weeknight dinner side or for gracing your holiday table this season!
Gluten-Free Ranch Potato Biscuits
- Prep Time: 10 mins
- Cook Time: 12 mins
- Total Time: 22 mins
- Yield: 12 biscuits 1x

- 1/2 cup Idaho Spuds Creamy Ranch instant mashed potato flakes
- 1 tsp honey
- 3 tbsp coconut oil, softened
- ½ cup unsweetened almond milk
- 1 1/4 cup gluten-free oat flour
- 1.5 tsp baking powder
- 1/4 tsp baking soda
- 1 tsp dried parsley flakes
- extra almond milk for brushing the biscuits
- Preheat the oven to 425 degrees.
- In a mixing bowl, combine the potato flakes, flour, baking powder, baking soda, and parsley.
- Cut in the coconut oil and mix well.
- Add the almond milk and honey. Mix into a soft dough. Knead lightly a few times until the dough holds together. You may need a little more milk.
- Roll out the dough into a log shape and cut into 12 equal sized pieces.
- Place on a parchment paper lined baking sheet
- Brush tops with extra almond milk, sprinkle with additional parsley if desired, and bake for 10-12 minutes or until golden brown on top.
I know I always need some sort of bread-y, potato-y side with a holiday meal and these biscuits made with Idaho Spuds Flavored Mashed Potatoes combine the best of both worlds.
Gluten-free, simple to make, and full creamy ranch flavor! These delicate, flaky biscuits are like nothing you’ve ever had before.
Now I am no southerner, but these are pretty darn good as far as biscuits come! Soft, perfectly crumbly upon first bite, and great for topping with your favorite savory spread. I’ve tried them with humus and warm butter so far and both were excellent additions!
Needless to say, I’ve been in carb heaven since I made this batch of Gluten-Free Ranch Potato Biscuits! I think you’ll agree that you need to make these IMMEDIATELY. Holidays or not, these are a quintessential comfort food for this time year and a great addition to any meal.
