10 oz medjool dates, chopped
¾ cup natural peanut butter (only ingredient should be peanuts, I like Crazy Richard’s brand)
2 tbsp dark cocoa powder
¼ cup sugar-free vegan chocolate chips (I use Enjoy Life or Lily’s)
2 tbsp chia seeds
¼ cup gluten-free quick oats
Combine all ingredients in a food processor until no big chunks of nuts or dates are left. Place mixture into a large bowl and roll into balls (about 1 inch in size) until the entire bowl is used up. Store in the fridge.
If you have a peanut allergy: swap out peanut butter for almond butter and peanuts for mixed nuts or almonds.
If you are grain-free: swap out oats for 2 tbsp of coconut flour.
