Because it’s been a long week.
Because I finished a marathon earlier this week.
Because I just got an awesome shipment of goodies from NuNaturals.
Because when is it ever a bad time for chocolate chip cookies?
Those are the reasons I’m sharing this recipe today. Aside from the fact that they’re just so darn ADDICTING! I can seriously go through a batch of these High Fiber Chocolate Chip Cookies in one sitting. Not advisable. 😉
But seriously friends, WHAT A WEEK it has been. I completed the Boston Marathon on Monday (recap coming soon….and next year I’ll actually RUN it), got hit with tons of end of semester projects from grad school, tried to get back on track with work after a few days away, and now I’m here. Friday. All I can say is finally. And I am sure quite a few of you out there are saying the exact same thing.
Now it’s, FINALLY, time for the cookie recipe too. 😉
High Fiber Chocolate Chip Cookies
- Prep Time: 5 mins
- Cook Time: 11 mins
- Total Time: 16 mins
- Yield: 12-13 cookies
- Category: Sweet Snacks
- 1 cup NuNaturals oat fiber, loosely packed
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup of water + 1 cup of Medjool dates, pureed
- 1/4 tsp pure vanilla extract
- 1/3 cup unsweetened vegan chocolate chips
- Preheat oven to 325 F. Combine all dry ingredients in a medium bowl, then stir in wet to form a dough. It will be dry at first, so keep stirring until a cookie-dough texture is achieved. Roll into balls. Place on a cookie tray (flatten slightly), and bake 11 minutes. They will look underdone. Remove from the oven anyway, and let them cool 10 minutes, during which time they will firm up.
Soft-baked deliciousness! The NuNaturals oat fiber I make these with give them such an interesting texture. So different than any other cookie I’ve ever had and SO good.
These little cookie delights are gluten-free, vegan, and sweetened with Medjool dates of course! So simple to make and perfect for when you’re craving a little something sweet and little something chocolatey.
Like you need any more reason to make these…but like I said above, it’s Friday…GO EAT A COOKIE!
