I’m not holding them back intentionally. There are just not enough days in the week (and not enough time in the days!) for me to share all of my wonderful recipe creations. The list is down to 23. 23 beautiful, delicious, healthy recipes…just waiting to be shared. But it’ll get done! Don’t you worry. I can’t hold out on you forever.
I will admit however, that I purposely saved today’s recipe in particular for the month of March! March is all about green. Spring is coming so the greenery outside is starting to show its colors again and of course we can’t forget about St. Patrick’s…the ultimate celebration of GREEN.
With that theme in mind, I wanted to make sure I share some of green recipes with you all this month. I already shared my snacktastic Zucchini Bread Bites and today you’re getting another veggie filled snack. High Protein Veggie Bread!
Made with oats, egg whites, and hearty cruciferous veggies…these loaves are the ‘strange but good’ savory snack you’ve been waiting for.
Now I know some of you might be turned off by the thought of a green loaf, but remember veggies in baked goods isn’t that weird of concept. Think about it! …we have carrot cake, zucchini bread, and I, of course, have plenty of veggie packed snack recipes! Give me the benefit of the doubt…this bread is delicious.
High Protein Veggie Loaf [gluten-free + whole grain]
- Prep Time: 10 mins
- Cook Time: 25 mins
- Total Time: 35 mins
- Yield: 2 mini loaves

- 2/3 of a bag of frozen broccoli and cauliflower (200 grams)
- ½ cup oats, ground into flour
- ¼ cup liquid egg whites
- 2 tablespoons plain Greek yogurt
- ½ teaspoon baking powder
- ¼ tsp baking soda
- 2 tsp herbs and spices of choice (feel free to use a few different kinds to make up the mixture)
- Preheat your oven to 350.
- Steam broccoli and cauliflower in the microwave until soft. Place in a food processor and process until smooth.
- Add the oat flour, baking powder and soda, and spices. Process until mixed.
- In a smaller separate bowl mix together the egg whites and yogurt. Add this mixture to the dry ingredients and stir together.
- Pour the mixture into two mini loaf pans and bake for 23-25 minutes. The top should be slightly golden brown and a knife should come out clean.
Gluten-free, high protein, and totally customizable…this is the the veggie filled snack you need in your day! Feel free to add whatever combination of spices and herbs you want. I like to make mine with garlic powder, onion powder, and dried basil It’s also a perfect base for all sorts of toppings too. Here are a few of my favorites…

Or you can just eat all on its own for the full veggie flavor. 🙂
Anyway you slice it (pun intended), this quick bread is totally unique, perfect for this time of year, and full of nutrients. Heck, you could probably even get your kids to eat these! (okay, maybe that’s wishful thinking 😉 )
