So I might have to change the name of my blog.
Yeaaaah. It’s pretty safe to say I’m obsessed. Maybe changing the name is going a little to far….but let me tell ya…..I ate the WHOLE DARN SQUASH tonight people! Ashamed? No. In complete squash ecstasy? Yes.
I never thought I could love a food so much.
Here’s what went down:
I took everyone’s advice they gave me about cooking up the squash, but in the end I decided to use my favorite, go-to recipe that I use for sweet potato fries to make the squash.
Oil-less Roasted Kabocha
(adapted from my Oil-less Sweet Potato Fry recipe)
This is recipe is pretty much heaven in the oven….the squash gets incredibly crispy on the outside and creamy and buttery (yes squash can be both of those apparently) on the inside. No words.
1 kabocha squash
1 egg white
Lots o’ cinnamon
Preheat oven to 425.
Remove the top and bottom of the squash. Cut in half and scoop out the seeds.
Cut into about 1 inch chunks.
While oven is heating up, soak squash in water (about 20 minutes).
Drain water, dry off squash with paper towels, and place in a large bowl.
Add egg white and cinnamon and toss to coat squash evenly.
Once coated, place squash on a parchment paper lined baking sheet.
Bake for 35 minutes.
The result will be pure bliss.
I honestly could have eaten the whole thing at dinner, but I new I would get a stomachache. But that sure didn’t stop be from eating the rest as a night time snack.
So pretty much I’m hooked. To bad these babies are so darn expensive! This one cost me 6 bucks! I know for sure I am going to buy another one tomorrow…but I am going to have to stop myself from cooking the whole thing up at once so I can make it last.
I am so mad I was missing out on these babies for so long! I am telling you….if you see a kabocha ANYWHERE…..BUY IT. You will be forever changed!
I am a kabocha convert for sure. I may need an intervention. So if ya don’t here from for a few days, assume I am running around town in search of mass quantities of squash stuffed to the brim with roasted deliciousness. On second though, don’t come find me.
I didn’t spend the whooole day plotting my next kabocha meal….I did get some other stuff done.

It was a great day…but that kabocha really took it over the top!
Okay, I’ll stop my tangent about my new foodie love. But expect to be seeing a lot more of it around here. I finally understand what Nicky has been talking about for so long!
