Sweetly spiced raw energy bites with the fresh flavor of lemon and the inflammation fighting power of turmeric. Vegan, gluten-free, and so easy to make, these bites will be your new favorite way to fuel your day.
One of my favorite places to go to breakfast in my city is a little place down by Canalside called The Healthy Scratch! It’s tucked right into the side of our hockey arena and is rarely busy, but has some of the best food, juices, and smoothies around. I often get pitaya or acai bowls, green smoothies, and I LOVE their wellness shots. My favorite being the Turmeric Lemon Ginger one.
One shot of that mixture and your whole body feels awake and alive! It’s spicy, warming, yet refreshing and energy giving. Combining those three ingredients (all with very strong, distinct flavors) doesn’t sound like it would taste too good. But for some reason, it works! And that wellness shot combo inspired the recipe I am sharing today.
I love fruit and nut based bars and energy bites as much as the next person. And although I don’t mind forking out money for my favorite varieties, I sometimes have to remind myself that I can make homemade versions that are JUST as good, if not better, than the store-bought ones. Plus, when you make them at home, you can adjust them to your personal preferences AND come up with some pretty cool flavor combinations.
Namely, these Lemon Ginger Turmeric Energy Bites! Play the video below to see them being made IN ACTION.
- 1 cup unsalted, dry roasted or raw cashews
- 1 cup raw almonds
- 12 pitted Medjool dates, chopped
- ¼ cup fresh lemon juice
- 1 tsp vanilla bean powder
- 1 tsp ground turmeric
- ½ tsp ground ginger
- ½ tsp cinnamon
- pinch of sea salt
- lemon zest for topping, optional
- Combine all ingredients into a food processor until a sticky, mixed consistency is achieved. Form mixture into 12-14 balls. Place in the fridge for at least 30 minutes to firm up. Sprinkle with lemon zest if desired.
Simply made of dates, nuts, spices, and fresh citrus, these energy bites are easy to make a full of the nutrients you need to power you through your day. Healthy fats, fiber, protein, and carbs…it’s all there. They’re also vegan, gluten-free, grain-free, paleo-friendly, and have no added sugar.
The fresh lemony taste paired with the spices and sweetness of the dates makes these the perfect snack for satisfying a treat craving. Pack a couple in your lunch bag or stash a container of them in the fridge for munching any time you need a pick me up!
