Lemon Ginger Turmeric Energy Bites

Ingredients

  • 1 cup unsalted, dry roasted or raw cashews
  • 1 cup raw almonds
  • 12 pitted Medjool dates, chopped
  • ¼ cup fresh lemon juice
  • 1 tsp vanilla bean powder
  • 1 tsp ground turmeric
  • ½ tsp ground ginger
  • 1/2 tsp cinnamon
  • pinch of sea salt
  • lemon zest for topping, optional

Instructions

  1. Combine all ingredients into a food processor until a sticky, mixed consistency is achieved. Form mixture into 12-14 balls. Place in the fridge for at least 30 minutes to firm up. Sprinkle with lemon zest if desired.
