Ever since I wrote my post on 11 Post Workout Protein Snacks, I’ve been having a ton of fun in the kitchen thinking up new ways to refuel after my sweat sessions. Whether I’m going for a run or lifting weight, I always feel like I recover better when I get a healthy dose of protein in right after.
Sure a protein bar or protein shake works in a pinch, but I much prefer homemade snacks! Lately, I’ve been MUG CAKE obsessed! I love making my Mint Chocolate Matcha Mug Cake….but since that one feels more like a holiday flavor, I’ve been craving something light and sweet.
With a bag of Lemon flavored whey protein in my cabinet, I thought it would be fun to experiment with a Lemon Meringue Pie Mug Cake!
Who doesn’t love lemon desserts/snacks!? They’re so light, citrusy, and full of tangy flavor. I am a big fan of lemon meringue pie as it is, so I figured a mug cake with those same flavor notes would be amazing.
I wasn’t wrong. 😉
Lemon Meringue Pie Mug Cake

- Cook Time: 1 min
- Total Time: 3 mins
- Yield: 1 mug cake 1x

- Spray a medium sized ramekin with cooking spray, set aside. Mix all ingredients together in a bowl. Pour ingredients into ramekin. Microwave on high for 1 minute. Garnish with golden berries and walnuts, if desired!
In less than 2 minutes from start to finish, I had a soft n’ fluffy, delicious snack! The KEY to this mug cake is the All Whites liquid egg whites I used. Have you heard of them? They’re my go-to liquid egg whites for baking and cooking!
I love them because they’re convenient, fat-free, cholesterol-free and low-calorie. Gotta love healthy, lean sources of pure protein like that!
