After weeks of desserts and sweet foods on the blog, I’ve decided to dedicate this week to savory sensations! Starting with today’s sharing of a delicious, vegan cheese sauce.Most dairy-free cheese sauce recipes call for soaked nuts, like cashews, or faux cheese products with tons of ingredients. Those types of vegan cheese alternatives have their place, but I wanted to craft a creamy, delicious sauce that didn’t require the soaking and straining process. Plus, by skipping the nuts, this sauce is lighter than a traditional cashew-based one.What it lacks in nuts however, it makes up for in cheesiness! Just like my unique Baked Mac n’ Cheese Cupcakes, this sauce relies on secret, healthy ingredients to give it flavor.Another plus? It an be whipped up in less than five minutes! So whether it’s a busy weeknight or a late night craving, your cheese fix is only moments away.
Low-Fat Vegan Cheese Sauce for One

Ingredients (2/3 cup)
- 2 tbsp nutritional yeast
- 1/2 cup unsweetened non-dairy milk
- 1 cup cauliflower, chopped
- 1 tsp Dijon mustard
- ¼ tsp liquid smoke
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1/8 tsp tumeric
Steam cauliflower. Mix all ingredients together in a blender. Pour over pasta, nachos, quesadillas, or stuffed baked potatoes!
I especially enjoy this sauce tossed with the new Gluten-Free Pasta from Barilla. I picked up a few boxes at my local BJ’s Wholesale Club and was really impressed! This is Barilla’s first gluten-free pasta product in their line. It’s simply made from corn & rice and cooks up just like regular pasta. (And don’t worry, Celiacs! It’s made in a gluten-free certified facility with dedicated gluten-free production lines!) When tossed with your favorite sauce (perhaps my cheese sauce? 😉 ) you can’t detect any difference in taste or texture from regular noodles. I think I actually prefer it to white noodles since I find it more satisfying! Gotta love fiber from unrefined grains.My sauce plus this new pasta make for a healthy, easy meal option to make for your family! Add some veggies like peas, steamed broccoli, or spinach to the sauce and pasta after combining and you have a balanced, complete meal you can feel good about eating or serving. And let’s not forget that there are already HIDDEN veggies in the sauce itself! Great for picky eaters or veggie-hating kids.
