Pistachios are such an underrated nut.
It seems like almonds and peanuts get all the attention. They’re made into nut butters, always promoted for their numerous health benefits, and are pretty universally enjoyed.
But pistachios? They rarely get the spotlight.
Healthy Pistachios
Which is a shame since these little green nuts are delicious and pretty unique compared to their nutty cousins.
A few awesome things that pistachios contain…
-high in protein (6 grams per serving)
-have a healthy ratio of beneficial omega-3 fatty acids and poly/monounsaturated fats
-good source of Vitamin B6
-good source of phosphorous
-rich in antioxidants like: lutein, beta-carotene, and gamma-tocophero
They also taste GREAT. So really, what’s not to love when it comes to pistachios?!
Pistachio ice cream started it all!
Well, if it weren’t for my dad, I probably would never have found out that I like pistachios! Pistachio ice cream is his all time favorite…pretty much anything pistachio flavored actually. When I was little we went to our favorite local custard shop and their flavor of the month happened to be pistachio. As normal kid would be, I was skeptical of trying a new-to-me ice cream flavor (chocolate vanilla twist, cookies n’ cream, mint-ting-a-ling, cookie dough…I always went with the tried and true standbys).
Somehow my dad convinced me to take a taste of his pistachio soft serve and I was immediately entranced with the sweet, earthy, nutty flavor. So much in fact, I gave my usual rainbow sprinkle twist to my mom and got my own cone of pistachio.
I’ve been a pistachio lover (ice cream and the nuts themselves) since then and I’m determined to get more people eating & enjoying these little green nuts.
Make Pistachios Great Again
In an attempt to increase the popularity of pistachios, I decided to pair them with one of the “it” products in the health food industry for sometime now…MATCHA!
Thus, Matcha Pistachio Protein Balls were born. The perfect mix of earthy, nutty, and sweet all combined into one energizing, easy to make bite.

- Prep Time: 5 minutes
- Total Time: 5 minutes
- Yield: 10-15 bites 1x
Ingredients
1 scoop Naked Matcha + Pea Protein
1.5 cups raw or dry roasted unsalted pistachios (no shells)
8oz medjool dates, chopped
Instructions
Place all ingredients in a food processor and blend until ingredients are evenly combined and a sticky texture is reached. Using a spoon, scoop out portions of the mixture and roll it into .5 inch to 1 inch balls (whichever size you prefer). Repeat until mixture is entirely used up.
