I am dubbing this the week of quick and easy recipes! We had a 3 ingredient side dish recipe on Monday and now I’m hitting you with a NO BAKE cookie recipe. So yummy and simple.
But before I get to the recipe itself, I have something important to share with you regarding the ingredients.

They even work with my LOCAL food bank-Food Bank of WNY! So when I went and purchased some of their products at my local Wegmans store, 6 servings of hot cereal were donated right in my region! I love that. Giving back with great tasting food.
Today I’m sharing a breakfast cookie recipe I made using their Brown Sugar Pecan Multigrain Hot Cereal! They’re no bake, super easy to make (just some simple mixing together is all that’s needed), and they have the most delicious soft texture. Full of nutrients to keep you satisfied and nourished at the start of your day.
No Bake Maple Pecan Breakfast Cookies

Ingredients
- 1 container The Soulfull Project Brown Sugar Pecan Multigrain Cereal
- 1 tbsp coconut flour
- 1/2 tsp ground cinnamon
- 1 scoop vanilla plant-based protein powder, 30 grams (I used vanilla Nuzest)
- 2 tbsp natural pecan or almond butter
- 1 tbsp maple syrup
- 1/4 cup non-dairy milk (I used almond milk)
Instructions
- Line a plate with baking paper and set aside.
- In a large mixing bowl, combine the cereal, coconut flour, cinnamon and protein powder and mix well.
- Stir in the nut butter and maple syrup until a crumbly mixture is formed. Using a tablespoon at a time, add non-dairy milk until a thick batter is formed. Using your hands, form into 3 GIANT rounded cookie shapes and enjoy immediately or refrigerate for one hour for best taste.
This recipe makes 3 GIANT cookies. Who wouldn’t want to eat cookies for breakfast!? They’re also vegan, gluten-free, and high in plant-based protein. You get all the carbs, healthy fats, and protein you need in your morning meal. Plus, they’re great for taking on the go or for extra busy mornings. 🙂
