The National Peanut Butter Lovers Month train keeps on rollin’, my friends! And today’s celebration of all things peanut butter is extra special because it happens to be my birthday! Any other fellow Scorpios out there?
In addition to the traditional birthday shenanigans going down, I happen to be celebrating one of my favorite foodie holidays…National Peanut Butter Fudge Day! How lucky am I that is falls on my birthday!?
I’ve always been a fudge lover, but PEANUT BUTTER fudge has a special place in my heart. The first time I ever tried it was at a local candy store called Watson’s where my sister worked when she was a teenager. They had a special kind of peanut butter fudge there called ‘meltaway’ and it literally melted away in your mouth upon first bite. So smooth, rich, and delicious. Like the sweetest, creamiest peanut butter you’ve ever had in your life!
No other fudge (chocolate or otherwise!) has ever compared to that peanut butter meltaway fudge from my childhood. And to be honest, I am not sure I would want to try and recreate it! It was just that special. But that doesn’t mean I can’t celebrate National Peanut Butter Fudge Day with something equally as peanut butter-y and equally as fudgy.
Inspiring by a few of my favorite kitchen staples, peanut flour and Nuzest protein powder (strawberry flavor for this recipe!), I thought it would be a fun to make a healthy, protein fudge to celebrate the day. I even challenged myself to make it with as few ingredients as possible. Got it down to 3! Pretty good, eh?
This Peanut Butter & Jelly Protein Fudge is INCREDIBLY easy to make and makes a for a great post workout snack since it’s so high in plant-based protein from both the Nuzest and the peanut flour. A double dose of PLANT POWER!
Plus it’s sweet and rich tasting without any added sugars or fats!
Peanut Butter & Jelly Protein Fudge
- Prep Time: 10 mins
- Cook Time: 20 mins
- Total Time: 30 mins
- Yield: 8 pieces
- Category: Sweet Snacks
- 3/4 cup pumpkin puree
- 1/2 cup Nuzest Strawberry Protein Powder (about 47 grams)
- 1/2 cup peanut flour + a little less than ½ cup water, mixed to form a spread
- Mix protein powder and pumpkin puree. (use your hands so a thick dough forms) Spread dough evenly in a parchment paper lined loaf pan.
- In a separate bowl, combine peanut flour and water. Spread peanut flour mixture on top of protein dough.
- Bake for 20 minutes at 350 F.
