I’m usually not a New Year’s resolutioner. I’m more of a believer that positive, healthy changes can be made at ANY time of year…or any time of your life. You just need the right mindset, attainable goals, and the right resources.
One of the biggest things my nutrition coaching clients and friends tell me they struggle with when trying to improve their health is….their diet.
Which makes sense because your diet (what you eat) is one of the biggest determinants of your weight, wellness, and overall health. But whether you’re trying to lose weight or not, a healthy diet is KEY to a long, happy life.
The three biggest complaints I hear when it comes to healthy eating are:
I don’t have enough time to make healthy food.
Healthy food is too expensive.
Cooking healthy is too HARD.
Well, today’s recipe debunks all of those “myths”/ assumptions ?…
The recipe comes together in less than 10 minutes.
It’s made with affordable, yet high quality ingredients.
NO cooking is required.
Bonus points…it will take your taste buds on a vacation to warmer weather and summer days. Just what I (we ALL) need to make it through cold winter days.

So here’s how to make my Southwestern Chicken Cobb…
Quick n’ Easy Southwestern Chicken Cobb Salad
- Prep Time: 10 mins
- Cook Time: 2 mins
- Total Time: 12 mins
- Yield: 4 servings 1x
- Category: Main Meals
- 5–6 cups greens of choice (I used: mixed greens, chopped green cabbage, and chopped butter lettuce)
- 2 cups Tyson® Grilled & Ready® Fully Cooked Oven Roasted Diced Chicken Breast
- ¾ cup frozen corn, pepper, and black bean blend, cooked according to directions
- 1 Roma tomato, halved and sliced thin
- ¼ cup red onion, chopped
- 1/3 cup low-fat Taco or Mexican shredded cheese
- Ranch Tortilla Chips
- ¼–1/2 cup Greek Yogurt Ranch Dressing
- Measure out chicken on a microwave safe plate or bowl and microwave for 2 minutes. Set aside and let cool. Meanwhile, fill serving plates with lettuce and toss in red onions. In rows, place tomatoes, corn/bean mix, chicken, and cheese. Do the same on each salad until all ingredients are used up. Drizzle with dressing and serve with crushed tortilla chips!
- Alternatively, toss all ingredients together in a large salad bowl and portion out servings of the salad all mixed together. Both ways are delicious!
This meal is naturally gluten-free and can be made dairy-free by swapping out the cheese for vegan cheese and the dressing for a vegan or paleo ranch dressing.
Make this salad as an easy, packable lunch or for light weeknight meal the whole family will love! And be sure to tag me if you make it and post a picture. I LOVE seeing your recreations of my recipes. ?
