1 1/4 cup raw cashews
heaping 1/2 cup of raw macadamia nuts
5 tbsp lemon juice
1 cup unsweetened shredded coconut
20 medjool dates, pits removed (about 2 cups)
Place all ingredients in a food processor and blend until dates and nuts are broken down. Scoop mixture into a bowl and roll bites in your hand until the mixture is used up. You’ll be able to make about 25 bites depending on the size you make them. Store in the refrigerator in a gallon-sized ziploc bag or tupperware.
