Your favorite decadent cake in brownie form! These Red Velvet Cake Brownies are fudgy, dense, and full of delicious, rich chocolate flavor. Gluten-free, flourless, and high protein!
I had a not so good day last week. One of those “everything that can go wrong, will go wrong” kind of days. Nothing seemed to go my way and I just didn’t feel like myself. In my actions or my thoughts. (Luckily I had the help of some friends to get me through!)
Needless to say, it was weird. Sort of like an out-of-body experience in way. I can relate it to the feeling you get when you wake up from a dream and still feel like you’re in it or that it actually happened.
The icky feelings carried into the next day and I still felt like I was in such a funk! So I turned to one of my favorite stress busting, relief inducing activities…BAKING.
Aside from getting outside and taking a walk, listening to a podcast, or cuddling with the pup for a bit, baking or doing something creative in the kitchen is a go-to for making me feel better. Something about pulling out a bunch of ingredients, measuring, pouring, and mixing them together into a new concoction brings me so much peace.
It quiets my mind and distracts me in the best way possible. Plus, if you’re lucky, you’re left at the end with a tasty treat! (Not ALL recipes work out however 😉 ). Luckily for you guys, and my wallet, my ingredient combinations on the day after my ‘bad’ day didn’t go to waste. In fact, they came together for an amazing new brownie recipe.
Oh yeah that’s right, chocolate’s always good for making me feel better too. But when is it not?!
Funny thing about today is that I actually planned on sharing a savory recipe. Either my Nut-Free Vegan Cheddar Broccoli Soup or my Savory Sweet Potato Pan Bread (any preference for which comes first?)! But since I had just made these brownies and I know that some of you have been going through some rough times too, I decided chocolate decadence was a MUST today.

Red Velvet Cake Brownies. Gluten-free, high protein, and SO FUDGY. These brownies get their chocolate flavor not only from chocolate whey protein, but also from one of my favorite iHerb ingredients…CocoCardio.
Have you heard of it? I mentioned it in my Top 5 MUST HAVE iHerb Products post…but I know a lot of you are still unfamiliar with it!
Basically, it’s powdered Red Velvet cake. Or at least that’s what I think of it as! 😉 In reality, it’s high quality dark cocoa mixed with beet juice powder and hibiscus extract. It’s got loads of bioactive phytonutrients and polyphenols, too! Great for adding to a recovery shake after a tough workout if you ask me. I also love mixing it into yogurt and smoothie bowls.
It’s not that you can’t make this recipe with CocoCardio, but it really adds that true Red Velvet flavor, ya know? So trust me, get your hands on a container of it ASAP! And make the first thing you do with it is use it in these brownies…
Red Velvet Cake Brownies [flourless + gluten-free]
- Prep Time: 10 mins
- Cook Time: 23 mins
- Total Time: 33 mins
- Yield: 9 brownies 1x
- 1/2 cup chickpeas/garbanzo (70 grams)
- ½ cup canned beets (100 grams)
- 2 T egg whites
- ½ scoop chocolate whey (14 grams)
- 1/2 t baking powder
- 1/4 t vanilla
- 2 T unsweetened almond milk
- 2 T CocoCardio
- Drain and rinse chickpeas.
- Puree chickpeas, beets, egg whites, milk, and vanilla until smooth.
- Mix in remaining ingredients. If batter is too thick add a splash of milk
- Pour into a parchment paper lined baking dish. Add any extras you’d like as toppings (nuts, chocolate chips, coconut, etc.). Bake at 350 for 23 minutes.
So whether you’ve had a bad day (or week!) or are just craving some Red Velvet goodness, you’ll love these brownies. As a testament to how much I enjoyed them, I’ll let you in on a little secret….the whole batch is already gone. 🙂
