Whole grains have always been an important part of my diet. Ever since I was little, my parents always had whole grain bread in the house and brown rice was served over white alongside dinner. I’ve always loved the taste of whole grains over refined or processed grains and over the years I’ve tried my fair share of unique grain products.
Farro. Wheatberries. Kamut. Spelt. Barley. Freekeh. Millet. Being a food blogger, I’ve tried them all!
But my old tried and true standbys are always brown rice and quinoa. I love both of these because they are hearty & satisfying, have a great nutty flavor, are FULL of plant-based protein, and pair well with pretty much everything! Despite my love for both, it’s not too often that I prepare them anymore.
As you know, I don’t do much meal prep, so I never make time to make a batch of rice or quinoa for the week. But that doesn’t stop me from incorporating them in my diet since I know how good they are for me!
Lately, I’ve been LOVING the Minute® Ready to Serve Brown Rice & Quinoa single serve cups. They are PERFECT for adding to a quick meal or snack and so convenient. In just a minute, I have a fully cooked (you can’t mess it up since it’s already cooked), perfect single portion of rice & quinoa at my disposal! I have been taking them with me on trips and even have been cooking more with them lately.
When recipes call for rice or quinoa, it can be such a pain to make a whole batch just for a single serving of the grain. Plus there’s the whole boiling water process, simmering, and stirring. Minute Ready to Serve makes it SO easy with these new microwavable cups. They’re gluten-free, high in fiber, have over 55 grams of whole grain per serving, and contain no preservatives.
With my parents’ party for the big game coming up (that I mentioned in my last few posts), I have been experimenting with new appetizer and snack ideas to serve. So far we have Vegan Buffalo Chicken Wing Dip and Cheesy Tofu Nuggets firmly on the menu. But next, I wanted to create something that would satisfy our guests PIZZA cravings! And who says it can’t be done with whole grain goodness?!
That’s where the idea for my Savory Italian Quinoa Bites came into play (no pun intended 😉 ).
They’re bite-sized, handheld snacks with TONS of savory pizza flavor! Gluten-free, cheesy, and SO delicious.
Savory Italian Quinoa Bites [gluten-free]
- Prep Time: 5 mins
- Cook Time: 20 mins
- Total Time: 25 mins
- Yield: 6 bites 1x

- 1 8.8 oz container of Minute Ready to Serve Brown Rice & Quinoa
- 1 cup shredded part-skim mozzarella cheese (or dairy-free alternative)
- ½ cup chopped mixed vegetables (I used onion and bell peppers)
- ½ cup grated parmesan cheese (or dairy-free alternative)
- ¼ cup tomato basil pasta sauce
- 2 large eggs
- 1 tablespoon Italian seasoning
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- salt and pepper, to taste
- Preheat oven to 400 degrees. Spray muffin pan with cooking spray and set aside.
- Add all of the ingredients to a large bowl and mix until fully combined.
- Evenly distribute the mixture between the muffin tins and gently press the mixture down.
- Bake for 15-20 minutes.
- Remove from the oven and allow to cool in the pan for about 5 minutes. Remove from the pan and serve with extra pasta sauce for dipping.
The smell in my kitchen as these tasty snacks were baking rivaled that of a NYC pizzeria. Gooey melty cheese, Italian herbs scenting the air, and so much nutty goodness from the Minute® Ready to Serve Brown Rice & Quinoa!
These savory bites of yum are good served hot or cold, but I recommend dipping them in extra pasta or marinara sauce! Perfect for munching on for a snack between meals or while cheering your team on to victory!
