Cookies so soft and doughy that they deserve to be compared to clouds! These high protein, gluten-free cookies combines sweet strawberries with savory basil for the ultimate taste experience. They have no added sugar and are loaded with fiber from the addition of beans!
By now you know my obsession with protein cookies. I’ve made numerous varieties over the past few months and every new flavor gets me more and more excited. They make perfect snacks, post workout refuel, and after dinner sweet treats. Now that I’ve come up with a basic formula for how to make them, I feel like the possibilities are endless!
Lucky for you all I have tons of ideas up my sleeves so there will be no shortage of cookies to come! My biggest inspiration for creating a new cookie flavor? Receiving cool ingredients to experiment with!
Recently I received a mega shipment of goodies from Bowflex.
Bowflex recently launched a line called Bowflex Body that focuses on nutrition and wellness needs of fit, active individuals. They’ve created healthy solutions for pre and post workout recovery as well as a foundational shake with optional boosters depending on your goals!
The French Vanilla shake mix is the base of the whole system. It’s made from a mix of 5 different proteins, prebiotic fiber, MCT oil, fruits and veggies, complex carbs, and phytochemicals. From there you have a choice of adding one of their 3 boosters: Rich Chocolate for fat burning, Mixed Berry for antioxidant power, or Peanut Butter (my favorite!) for extra protein! These products work together to provide lasting satiety and energy, support your immune system, and aid lean muscle development.
The Pre-Workout and Daily Energy are also pretty awesome! They taste amazing (one if Passion Fruit flavored and the other is Wildberry Pomegranate) and they really do give you a great natural boost of energy. The Pre-Workout has been tested to show that it even increases aerobic compacity and improves performance. I’ve taken it a few times before my workouts instead of my usual coffee and have had GREAT sessions as a result.

Out of all of the products, the French Vanilla shake immediately caught my eye! I imagined it tasting like milkshake and I thought it would be perfect to use in my next round of protein cookies. I’ll let you in on a secret…it was a good choice on my part! 😉
Strawberry Basil Cloud Cookies
Ingredients (12 cookies)
- 1 cup (150g) white kidney beans, rinsed and drained
- 1 cup (140g) fresh strawberries,
- 1/4 cup liquid egg whites
- 2 tsp dried basil
- 2 scoops (56g) Bowflex French Vanilla shake mix (or vanilla whey protein powder)
- 1/4 tsp vanilla
- 1/2 tsp baking powder
- sweetener, to taste if you like a sweeter cookie
Preheat oven to 350. In a food processor, blend beans, strawberries, and egg whites until smooth. Add remaining ingredients and blend until smooth and well combined. Divide batter into 12 circles on a parchment paper lined baking sheet. Bake for 10-12 minutes. Remove from oven and cool on a wire rack.
Strawberry and basil may seem like a bizarre combination, but trust me, they compliment each other perfectly. The natural sweet n’ savory flavor of the basil is intensified by the fruitiness of the strawberries.
I am obsessed with these now and have been making them weekly! They freeze great by the way.
I really like protein cookies as an alternative way to consume protein powder since shakes on their own can get sort of boring after a while. The French Vanilla shake really does taste like milkshake when mixed with a liquid, but I have to admit, I like it EVEN BETTER in baked goods.
