Is anyone as excited for this new month as I am? A few things I am happy about…
+ GRADUATING…classes end this week, followed by exam week, and then I graduate late in the month! So pumped.
+the (unofficial) official start of summer…at least in my opinion! May means summer to me, even if the weather doesn’t agree.
+NATIONAL STRAWBERRY MONTH! Hell yeah! I love fresh strawberries and going strawberry picking. Each year when it’s finally strawberry season again, I go all out with celebrating. I can’t wait to buy my first in-season quart of strawberries at the grocery store this week. Not only are they cheaper (finally!), but there is just something so sweet and delicious about produce when it’s the right time of year for it.
My favorite way to enjoy strawberries (other than straight out of the container of course) is in my mom’s homemade Strawberry Shortcake.
Such a simple, fresh dessert but oh-so tasty! Strawberries dressed in a bit of sugar and water, homemade biscuits (these are incredible!), and HAND WHIPPED whipped cream. It truly doesn’t get any better when it comes to a summer treat.
The problem is, she only makes it for special occasion like the Fourth of July or a family party! A big bummer because I would eat it every day during the summer if I could. I think my dad would too!
So of course, since strawberry season is upon us, I had to take matters into my own hands to get my strawberry shortcake fix.
Inspired by my moms simple strawberry shortcake, I created a delicious recipe for Strawberry Shortcake Donuts!
That’s right friends, the donut pan obsession is still going strong! I am pretty sure I’ve tried making every one of my recipes in my donut pan. Baked goods are just better in donut form, aren’t they?
Strawberry Shortcake Donuts
- Prep Time: 10 mins
- Cook Time: 12 mins
- Total Time: 22 mins
- Yield: 6 donuts 1x
- Category: Breakfast Foods
- Dry ingredients:
- 1/2 cup of rolled oats, ground into flour
- 15 grams vanilla whey protein (about 1/2 scoop)
- 2 tbsp coconut flour
- 2 packs of freeze dried strawberries
- ½ tsp cinnamon
- 1 tsp baking powder
- ½ tsp baking soda
- Wet ingredients:
- 2 tbsp of plain greek yogurt
- 2 tbsp unsweetened applesauce
- 2 tbsp liquid egg whites
- 1/2 cup unsweetened almond milk
- 1/2 tsp of apple cider vinegar
- Preheat the oven to 375 degrees. In a small cup, combine you almond milk and vinegar and set aside. In a food processor, grind oats and freeze dried strawberries into flour. Mix with the rest of your dry ingredients.
- In your smaller bowl combine all of the wet, including the almond milk mixture until there are no clumps. Fold your wet into your dry and stir but do not over-mix. It should be thick but not overly so. Portion out your batter into 6 well-sprayed doughnut wells and place into the oven. Bake for 12 minutes or until tops are lightly golden brown.
Easy to prepare and full of strawberry flavor with a hint of vanilla! They’re also high protein, made from whole grains, and gluten-free. Just like my Carrot Cake Donuts, these sweet donut delights are full of the taste of a classic dessert, yet they’re wholesome and good for you!
I thought about calling them Pro-nuts since they’d make such a great protein-filled post-workout snack. But they’re also great for breakfast too!
Spread with your favorite whipped cream cheese or even some strawberry jam for extra strawberry flavor! Even on their own, you guys will love these. I personally can’t get enough and I finally have a treat to hold me over between my mom’s strawberry shortcake making.
