A host of superfoods all in one small bite! These Superfood Peanut Butter Bites are perfect for a boost of energy in your day. They are vegan, gluten-free, no added sugar, and CHOCOLATE-COVERED. Healthy snacking doesn’t get any better!
When it’s consistently in the high 80s every afternoon (Believe me, not complaining at all! Love the hot weather!), I crave something cool, creamy, and energy-boosting in the afternoon. The heat definitely contributes to that afternoon slump we sometimes get. The yawns start happening, fatigue sets in, and it feels like it might be time for a nap. I for one, do not have time for naps and I know a lot of you are super busy too! So what’s a girl to do?
Well if you know me, you know I turn to SNACKS! Not just any type of snack though. It’s got to have certain qualities. DELICIOUSNESS for one, high in protein, high in healthy fats, preferably only made with natural sugars, and easy to munch on while I’m doing other things.
I have a lot of snack recipes that meet this criteria already but recently I have been craving chocolate and peanut butter like it’s going out of style. I knew I had to satisfy that craving and create a new treat for myself…and all of you, of course!
Luckily some inspiration struck when I was sent the new Classic Plus Protein Powder from SunWarrior! I already am a big fan of their raw, vegan, organic protein and use it all the time to make my No Bake Banana Nut Protein Bars (one of the most popular recipes on the blog!).
This new line from them offers everything that the Classic products have but adds the amino acid balancing effects of peas, chia seeds, quinoa, and amaranth. Brown Rice is still the main protein component and because of this the powder is full of protein and fiber. It’s easy on the digestive system, sensitive to those with allergies, and provides 18 grams of plant based protein per serving. But aside, from it’s stellar nutritional profile, the Plus line TASTES GREAT. No chalkiness or grit! I received the chocolate flavor and to me it tastes like hot chocolate mix. So yummy and very chocolatey.
This protein powder combined with all the other tasty ingredients in my new Superfood Peanut Butter Bites, makes for a healthy, decadent snack, that tastes just as good as it is for your body.
Why ‘superfood‘ you ask? Well they’ve got a secret ingredient that really take their nutrition to the next level….avocado!
The avocado lends its creamy texture to make these bites even more smooth and cookie dough-like. It also adds a dose of healthy fats to keep you nice and satisfied till dinner!
Superfood Peanut Butter Bites
Ingredients (13 bites)
- ½ of an avocado
- ¾ cup natural crunchy peanut butter
- 1 small banana
- ¼ cup peanut flour
- 2 tbsp coconut flour
- 2 tbsp chocolate brown rice protein powder
- ½ bar of Baker’s Unsweetened baking chocolate
- 1 tbsp coconut oil
Blend together avocado and banana in a food processor until smooth. Place mixture in a bowl and stir in peanut butter until well combined. Add in peanut flour, coconut flour, and protein powder. Mix until the batter resembles cookie dough texture. Roll batter into 12-13 balls. Place on a parchment paper lined cookie sheet, stick a toothpick in each one, and freeze for 5-10 minutes to harden them slightly.
Melt chocolate and coconut oil in a small pot over medium heat. Once fully melted, remove pot from heat. Dip each ball in the chocolate until fully covered. Place back on the parchment paper. Repeat with remaining balls. Freeze the balls for 20 minutes. Store in the refrigerator or the freezer.
These bites are a delight straight out of the fridge or freezer! Cold, creamy, and full of chocolate-peanut butter flavor. They’re the ultimate energy bites and they taste like dessert!
