Happy Monday, friends! I have to kick-but things to share with you today that are sure to get your week started on the right foot. First, an energizing workout and second, an easy snack recipe that’s sugar free, gluten free, and easy to make! In fact, I promised you guys this recipe MONTHS ago, so it’s about time I follow through. 🙂
First up, time to sweat!
I have been loving this simple circuit workout lately. It’s straight forward uses traditional strength and cardio moves, and really gets your heart rate up! Plus, there is enough variety in it that it goes by super quick and doesn’t leave you bored.

And once you’re done with your workout, you can head to the kitchen for a delicious mugcake snack.
Can you believe I’m sharing a mugcake recipe? You all know I’ve had major failures in the past, but this time I think I’ve nailed a basic recipe that’s is pretty much no-fail. This recipe is only sweetened with fruit, completely grain and gluten free, and high in protein and carbs for that post-workout refuel!
Peaches n’ Cream Mugcake
Ingredients (1 mugcake)
- 1/4 cup frozen peaches, thawed and chopped
- 1 tbsp coconut flour
- 1 tbsp whey protein powder
- 1/2 tsp cinnamon
- 1/2 tsp baking powder
- 1/2 tbsp peach butter
- 2 tbsp liquid egg whites
- 1 tbsp plain greek yogurt
Instructions
Mix all ingredients in a microwave safe bowl. Microwave on high for 1 minute.
I love that this mugcake uses frozen fruit because it allows you to have summery flavors when peaches aren’t in season. Lately I have been craving out of season foods, but I refuse to pay for produce that’s been shipped long ways and doesn’t taste very fresh anyways. Not to mention how expensive out of season fruit and veggies are right now. I’m all about going for the deals!

So that’s all for me today. Get your sweat on, then get your snack on. It’s truly one of my favorite combos of activities! Nothing better than powering through a workout and knowing you have a delicious snack waiting for you (or a minute away in the microwave! 😉 ).

Ughh I definitely miss peaches!! I also have had my fails with mug cakes and usually just keep it simple with oats but I will definitely give this one a go! I love bootcamp workouts especially when they end with burpees! 😉

Yep, I hear you, I have been craving those fresh, juicy summer fruits too. I bought some raspberries yesterday, and peaches….oh those sound so good right now, but only if they are good peaches, I hate it when they are all bitty, yuck! You know what would not be yuck though? This mugcake! I love peaches and cream anything, and this looks so healthy, no guilt over this dessert!
Gosh I would LOVE some berries right now!! I just can’t justify the high prices at the store. 🙁

Definitely need to try this out but I need to substitute coconut flour with almond flour most likely since I honestly can’t stand coconut? Is it potent in flour form? Great post need to try out that work out too!
Coconut flour tastes totally different than straight coconut! You might like it!!
I cannot wait for spring an the return of fresh peaches! I like to eat them in a bowl of farm-fresh milk. Definitely need to do a mug cake with them too though!

What a great idea! I love peaches in anything. And the “fresh” peaches last summer were so disappointing that I hardly bought any. Frozen fruit is wonderful this time of year!
