No, not sweet nothings….sweet SOMETHING’S! Things from this week that have made me happy….made me smile….and have just been all around SWEEEEET.
I can’t get enough of Ella now that she got her haircut! She looks just like she did when she was a puppy and I just want to play with her all day!
I was able to hang with some horses on Thursday! I have been wanting to get back into horseback riding FOREVER and it looks like I will finally be able to do that! I can’t wait. Just being around horses again felt so amazing. They are so incredibly smart and intuitive.

Sweet [literally] Deliveries
Nu Naturals sent me a package full of all their new stevia products! I have never been a big stevia user in the past but with flavors like lemon, orange, and peppermint? I know there is some serious experimenting in my future! Unfortunately I don’t have much time right now since I am getting ready to move into my dorm and obviously won’t be baking on campus….so it may be a few weeks before I get around to using these. I have some ideas though….lemon poppy seed muffins, chocolate mint muffin tops, and cocoa orange oat bars!
Our dining room has pretty much turned into packing central…mom’s not to happy about that one . But I just keep reminding her that all that stuff will be gone by Wednesday…including me!!!
[Picked this baby up at Marshalls earlier this week! A microwave popcorn popper for my dorm! Buying kernels is SO much cheaper than buying microwave popcorn bags….its like .89 cents as opposed to 5 dollar a box!]
New Reading Material
Love when my magazines arrive! Even though I stopped subscribing to 17 two years ago they STILL send me subscriptions (TWO magazines a month actually!)…so something must have went wrong in their subscription department. Oh well! I don’t particularly like the magazine but it makes for a good distraction at the gym and I will admit I was excited to see Kendall and Kylie on the cover….Keeping up with the Kardashian’s is my reality TV guilty pleasure

I promised you all the recipe for the Mac n’ Cheese I featured on WIAW! Here it is….
Smoked Gouda Mac n’ Cheese
Adapted from Family Circle
Makes 4 servings
1 head cauliflower, cut into small florets
1 head broccoli, cut into small florets
2 tbsp olive oil
1/2 tsp salt
1/4 tsp garlic powder
1/8 tsp black pepper
1/2 tsp italian seasoning
1/4 cup whole wheat panko bread crumbs
1.5 tbsp unsalted organic butter
1 box of whole wheat rotini
2 tbsp whole wheat flour
2 cups of 2% milk
1/4 tsp smoked paprika
6 oz of smoked gouda cheese, shredded
Preheat oven to 375. Toss cauliflower, oil, 1/4 tsp salt, 1/8 tsp garlic powder, and the pepper together. Spread onto a parchment paper lined baking sheet. Bake for 25 minutes and then reduce heat to 350.
Bring a large pot of water to a boil (toss a little salt in at this point.
In a small pan heat 1/2 tbsp of butter and toss in bread crumbs until lightly toasted (about 2-3 minutes). Set aside.
Add pasta to boiling water and cook for about 10 minutes. Drain it and return it to the pot. In the a small saucepan , heat 1 tbsp of butter, add flour and whisk for two minutes, then whisk in milk, remaining salt, smoked paprika, and garlic powder. Bring to a simmer. Cook for 3 minutes, whisking occasionally. Remove from heat and whisk in gouda.
Combine the pasta with the sauce and veggies. Pour mixture into a 13x9x2 baking dish. Top with bread crumbs. Bake for 20 minutes at 350.
The result is a delicious comfort meal with amazing flavor.

Today’s Healthy Help: At my dad’s baseball game last night, a foreign couple came over and sat next to us on the bleachers. They were pretty unaware of how the game was played and what exactly was going on and asked me to it explain it to them. I ended up walking them through the whole game and having a lovely conversation in the process….they were so nice!
