Thick n’ creamy overnight oats with the sweetness of blueberries and crunchy nuts throughout! Vegan, gluten-free, and simple to make, this Blueberry Overnight Oatmeal Parfait will be your new favorite make-ahead morning meal.
This post is pretty special, friends. Not only do I have a BOMB breakfast recipe to share that uses my favorite Bob’s Red Mill ingredients, but also I am debuting my first ever RECIPE VIDEO!!
Mind you, it’s my first one and I am still learning the ropes of iMovie so it’s a little rough…BUT I am really proud of it since it took a lot of work to put together. Kudos to anyone who makes videos for every one of their recipes.
It was really fun making it too! From the filming and editing to figuring out how to speed up/slow down clips and add background music…it was all an exciting learning process.
Of course, none of it would have been possible without all the amazing ingredients I had on hand from Bob’s Red Mill. Not only are they my go-to for baking ingredients, but I also use their products in my daily meals and snacks. There’s nothing better than a wholesome breakfast made with high quality foods from Bob’s. My personal favorites to include in my morning meal are their: gluten-free instant or rolled oats, chia seeds, buckwheat groats, and shredded coconut….all of which are in the delicious recipe I am sharing today!
We all know overnight oats are super popular in the blog world and in the healthy living sphere in general, but believe it or not, some people struggle with making them. It can be hard to get the ratios exactly right to achieve that creamy, dreamy texture in the morning.
Today I am sharing my go-to, NO FAIL overnight oatmeal recipe. It comes out PERFECT in the morning and is SO easy to throw together the night before.
Watch me make it! (if the video is blurry, change the quality setting in the right hand corner of the screen to 1080 HD)

- 1 6oz container of Silk Blueberry yogurt (or another dairy-free yogurt of choice)
- ½ cup unsweetened soy or cashew milk
- ½ cup frozen blueberries
- Optional: coconut, buckwheat groats, cashews, etc. for topping
- Mix all ingredients together in a bowl and place in the fridge overnight. Top with desired toppings in the morning and enjoy!
Vegan, gluten-free, and full of healthy ingredients, this bowl of blueberry deliciousness is the perfect way to start your day. It’s got everything you need from healthy fats and complex carbs to protein and antioxidant rich ingredients.
You can’t go wrong with a nutrient packed bowl like this!
