I am sad to say, friends, but National Soup Month is coming to a close. We started the month off on a high note with my Vegan Chinese 5 Spice Noodle Soup, so it only seemed right to close it with a bang as well!
Today I have a vegan spin on a classic comfort food. My favorite comfort food (aside from cereal, toast, and mac and cheese of course!) to be exact….Cream of Broccoli Soup.
Does anyone remember going to TGIFriday’s when they were younger and getting big bowls of this soup? For some reason, I have vivid memories of getting it there! It was always so creamy and rich with BIG chunks of fresh broccoli throughout. Cheesy, soothing to the soul, and oh-so filing! I just loved it. Especially with a side of oyster crackers or crusty garlic bread. YUM.
Well, I got to thinking the other day, I haven’t had Cream of Broccoli Soup in years! Not for any reason other than I haven’t really craved it. Once I saw the beautiful heads of broccoli at Wegmans this week, however, I knew it was time for me to make some!
This was my first time making it on my own, but of course I made up my own recipe. Following others recipes can be fun sometime sure…but I much prefer doing my own experimenting in the kitchen. Especially when I have vegan and gluten-free friends to think about!
Cream of Broccoli Soup has dairy right in its name. It’s not a soup you typically associate with being vegan friendly. Not only that, but also its high in saturated fat, calories, and lactose which can cause gastrointestinal upset for some folks. It’s nice to have rich foods sometimes, but there certainly is a level of too rich. I forgot to mention the accompanying stomach-aches that would result after those infrequent trips to TGIFridays. 😉
No need to worry though, my version of Cream of Broccoli Soup is 100% plant-based, dairy-free, and even nut-free. No cashews or Macadamia nuts to provide it’s creamy, (natural) richness…just good ol’ non-dairy milk, luscious steamed potatoes, and my go-to for cheesy vegan flavor, nutritional yeast.
The result of a few simple ingredients cooked together and pureed into a luxuriously smooth mixture is a soup that’s bursting with nutrition and delicious taste. This HCLF Vegan Cream of Broccoli Soup is a true winner.
HCLF Vegan Cream of Broccoli Soup
- Prep Time: 10 mins
- Cook Time: 30 mins
- Total Time: 40 mins
- Yield: 4 servings

- 1 medium Yukon gold potato, peeled and cubed
- 2-3 cups frozen broccoli (2 16 oz bags)
- 2 cloves garlic
- 1/2 yellow or white onion (about 100 grams)
- 3 stalks of celery
- 2-3 cups of spinach (half a bag of frozen spinach)
- 3 tbsp nutritional yeast
- 2 cups of vegetable broth
- 1 cup unsweetened non-dairy milk
- Salt and pepper to taste
- Boil potato until soft.
- Roughly chop the garlic, onion, and celery.
- Dry-sauté garlic and onion over medium heat until the garlic toasts slightly, then add the broth, broccoli, celery, potato, and spinach. Simmer until soft.
- Remove from heat, and add to blender along with nutritional yeast and milk. Blend until smooth and creamy. Add more broth and/or almond milk as necessary to get soup to the consistency you prefer.
High in fiber, complex carbs, vitamin B12, and all sorts of antioxidants, you’ll love the texture and taste of this classic comfort soup! Y’all have heard of comfort FOOD….well this definitely deserves a category all its own. Comfort SOUP.
It’s also gluten-free and perfect for the winter weather that most of us are still experiencing. Another thing I love about it? The soup gets better as the days go by…more flavor, more taste, and more delicious comfort when heated to just the right temperature.
I love topping mine with herbs, extra nutritional yeast, or even some crumbled up JillzCrackerz. It also pairs lovely with grilled cheese! Make your grilled cheese with Field Roast Chao slices for a totally vegan meal. Eating yummy food that is animal-product free is easy, see?
Seeing as I went through a batch of this in less than a week, I think it’s time to make more. Better hurry before National Soup Month ends! 😉
