Seasonal flavor lovers unite!
I certainly am one and so are a few of my blogger friends. I honestly think I could eat the flavors of the holiday season all year round (and I do in most cases!) and they agree.
Today we’ve rounded up some unique sweet treats that are perfect for fall festivities and the upcoming holiday season! Can you believe how fast this second half of 2016 is going? Soon it’ll be New Years before we even know it!
So that means it’s time to do ALL THE BAKING and DESSERT MAKING! Tis’ the season, right?
It’s no secret I’ve been on a pumpkin kick lately. Pumpkin Cupcakes, Pumpkin Spice Lattes, Pumpkin Cookies…you name it, I’ve been making it. It’s hard to imagine there’s any other unique pumpkin recipes that could be out there to share. But never fear, my fellow pumpkin-obsessed friends! I have a NEW pumpkin recipe to share with you today that is not only different from what I’ve shared in the past, but pretty darn incredible all on its own!
May I present…HCLF Vegan Pumpkin Spice Balls! That’s right. No nuts, no grains, no added sugar, and full of delicious pumpkin flavor for fall!
HCLF Vegan Pumpkin Spice Balls
- Prep Time: 10 mins
- Total Time: 10 mins
- Yield: 10 balls 1x
- Category: Sweet Snacks
- ¼ cup + 2 tbsp Anti-grain pumpkin flour
- ½ cup pure pumpkin puree
- ½ cup unsweetened apple sauce
- ½ cup chickpeas, rinsed and drained
- ½ tsp pumpkin pie spice
- Blend chickpeas, pumpkin puree, and applesauce in a food processor until smooth. Stir chickpea mixture with pumpkin flour and pumpkin pie spice until a dough forms (add a tbsp at a time more of flour if the mixture is too wet). Divide dough into 10 balls and place on parchment paper on top of plate. Place plate in the freezer and freeze for at least an hour before eating. Store in the freezer or fridge.
These bites are VERY pumpkin-y. So if you’re a true pumpkin lover like me they’ll be right up your alley. Soft, creamy, and perfectly spiced & sweet. I love eating them on their own post-workout since they’re high in plant-based protein or chopping them up as a festive topping for protein ice cream.
Any way you eat them, you’ll feel fabulously fall-like! There’s nothing to get you more into the holiday season than eating the flavors that come around this time of year.
