One of my FAVORITE meals as a kid was my mom’s homemade chili. A classic meat and bean filled meal full of spices, chili sauce, chopped peppers & onions, and any other random ingredients my mom had on hand that day. I always loved when she threw in chunks of sweet potato!
It was a staple meal no matter what time of year it was. In the dead of winter and at the height of summer heat. It really didn’t matter. No one would ever complained when she made it because it was just that darn good!
I would pile mine high with shredded Mexican cheese, plain Greek yogurt, and TONS of Fritos. Anyone else out there each Fritos with their chili? 😋
When I moved out of my parent’s house after college, I always appreciated when my mom invited me over for her homemade chili. It is such a comfort food for me and always reminds me of childhood!
Lately, she’s been switching things up a bit and trying her hand at some different kinds of chili. Her most recent experiment was with a recipe for White Chicken Chili.
I had never really had any other kind of chili aside from classic “red” chili before, so I didn’t know what to expect. But I was happily surprised with a delicious twist on my old childhood favorite!
If you’re not familiar with White Chili, it’s a variety of chili made with white beans, chicken, green chilis, and sometimes cream or cream cheese. It appears “white” as opposed to red or darker in color because of the lack of tomatoes in it.
When I tried my mom’s White Chicken Chili, I instantly fell in love! So much in fact, that I decided to make my own version to share with all of you. But of course, I couldn’t leave my veggie and vegan friends out! So today you’re getting my recipe for VEGAN Slow Cooker White Chicken Chili!
Yep, that’s right…no chickens were harmed in the making of this chili.😉
- 20 oz. vegan chicken strips (I used Gardein brand)
- 1 yellow onion, diced
- 2 cloves garlic minced
- 24 oz. vegetable broth (low sodium)
- 1 15oz cans Great Northern beans, drained and rinsed
- 16 oz. salsa verde
- 2 cups frozen corn
- 2 ribs of celery, chopped
- 2 whole carrots, chopped
- 1 medium zucchini, chopped
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp cumin
- ¾ tsp oregano
- ½ tsp smoked paprika
- ½ tsp chili powder
- ¼ tsp cayenne pepper
- small handful fresh cilantro chopped
- 8 oz vegan cream cheese (I used Kite Hill brand)
- ½ cup unsweetened vegan creamer (I used Califia Farms brand)
- Add chicken strips to bottom of slow cooker, top with salt, pepper, and spices.
- Top with diced onion, minced garlic, great Northern beans, salsa, zucchini, celery, carrots, corn, broth, and cilantro. Stir.
- Add cream cheese and creamer, stir, then cover.
- Cover and cook on HIGH for 5-7 hours.
- Stir well and serve with desired toppings.
Full of veggies, plant-based protein, and dairy-free creaminess, this easy-to-make slow cooked chili will be your new favorite meal to prepare for the family.
Sure, it’s not an Instant Pot meal, but one thing I love about slow cooker recipes is that they are set it and forget it type of meals. You could literally throw all the ingredients into your slow cooker before work in the morning and coming home in the evening to a crock pot full of piping hot chili perfection!
Topped with extra cilantro, avocado chunks, and shredded vegan cheese, your tastebuds and stomach will thank you for feeding them this amazing meal.
