I can’t believe June is already HALF OVER. This summer is going by far too quickly in my opinion. But it seems that’s always the case when you have a break from school, am I right?
Today’s WIAW is nothing fancy. No product reviews, giveaways, or recipes. Instead I wanted to take the time to catch you all up on what’s going on in my life, what’s coming up for me, and some exciting things that have been taking place. Let’s consider it a sort of virtual coffee date! I’m gonna list it out, since I have a lot to share. 🙂
-I am studying for my Fitness Nutrition Coach certification.
-I am going to NYC on a solo trip next week! Meeting up with some lovely people and taking in the sights. I will be sure to recap when I get back!
-I recently have had my first acceptances onto Foodgawker…the food photography mecca! So pumped.
-I’ve been really trying to up my Pinterest game. Follow me there if you like delicious food! 🙂
-I’m now a Mode Content Contributor…check out my latest collection of curated stories here…
-I started a Tumblr for my blog and I’ve opened up the Ask Box, so if you have any questions you want to ask or advice you want to seek you can do it anonymously there!
-I have also revived my Poshmark account! So if you’re interested in name brand clothes in really good condition, check that out. I’m selling everything for super cheap, too!
Ahhhh, now that we have the housekeeping out of the way, let’s get to the FOOD! Lots of good stuff to share today.
I recently got my monthly shipment of produce from Frieda’s and I’ve already had a ton of fun making up some new recipes using the goods.
Here we have white asparagus (so unique!), white endive (slightly bitter but good for dipping in hummus), ghost chilies & hatch chilies (some of the hottest peppers on Earth!), golden kiwi (even better than regular!), and lychees (haven’t had ones this fresh since I was in China)! Can’t wait to share what I made using some of these.
Now for WIAW. Just a reminder, I share a full day of eats and then under that I post ‘other recent eats’. The ‘other recent eats’ are not from the same day as the full day. I wanted to clarify that because I’ve gotten a few strange comments about it lately. Breakfast
pumpkin spice green smoothie with cereals, granola, dried fruit, and coconut flour pumpkin yogurt with cottage cheese and peanut butter drizzle
black eyed pea salad with salsa//tortilla with frozen banana and peanut butter//dry roasted edamame
ice cream sundae//pancake mix muffins
Went to dinner at one of my favorite restaurants…
Split some apps: humus plate with local bread, roasted garlic, olives, and vegges//seitan wings with pickled celery and carrots//raw kimchi and cashew cream lettuce wraps (AMAZING)roasted beet salad with pickled onions polenta with black lentils, sun-dried tomatoes, mushrooms, swiss chard, pesto, and (I added) grilled shrimp
I’ve never been a huge fan of polenta but I couldn’t resist ordering this since it combined so many of my favorite foods and was prepared in such a unique way!
