One part I love about being more flexible with my food choices is that it allows me to be more open to trying new foods! Lately, I’ve been trying tons of ‘new-to-me’ products and it’s been really fun to explore my likes and dislikes. Luckily, most of the things I’ve been trying I’ve enjoyed very much. Today I wanted to share two foods that were totally and completely new to me that I ended up loving! I’ve been incorporating them into my diet almost everyday now.
I’ve recently started eating cream cheese again (and I’m loving it!), so when I saw there was a vegan version, I knew I had to try that too! I am all about expanding my food horizons and these products from Kite Hill were certainly new for me. Kite Hill’s non-dairy cheeses are made primarily from almonds and a few other simple ingredients. No crazy additives like other vegan cheese products. These guys are all natural and made from REAL food.
The first thing I dug into was the Plain Cream Cheese. I don’t know how they did it but they got the texture spot on! Creamy, smooth, and thick. It’s easy to spread and has a great tangy flavor that I actually like better than regular cream cheese. The chive flavor had a great savory taste and was amazing spread on everything bagels! My other favorite product was the Soft Ripened cheese. This was like FRESH mozzarella cheese. Again, the texture was perfect and it really had a mild cheesy flavor that mozzarella has. I loved making caprese sandwiches with this.
The ricotta was a little more crumbly than regular dairy filled ricotta, but it still had a mild, sweet taste and went well with pasta! The other soft cheeses, Original and Truffle Dill and Chive, were delicious as well. Soft and almost spreadable so they tasted great with crackers! I especially liked the addition of truffle oil….it adds such a unique flavor and makes the cheese taste so rich!
I am so excited about these cheeses. I only wish they were available near me because they would certainly become staples in my house if there were!
Another new to me food that I’ve been obsessing over lately is Tiger Nuts. Which are actually not nuts at all!
Tiger Nuts USA harvests 100% organic tiger nuts straight from their prime growing area in Spain. These ‘nuts’ are actually tubers (think potatoes, cassava, and yams) and they taste just like chestnuts to me. I am in love with chestnuts around the holidays so having access to a snack that tastes just like them year round is awesome. Tiger Nuts are naturally gluten free, high in vitamins and minerals, lower in calories than regular nuts, and are super high in fiber. But really, my favorite part is the taste! I can’t get over how naturally sweet they are. So far I’ve just been snacking on the nuts themselves (I prefer the peeled ones since they’re not as tough to chew), but I can’t wait to do some baking with the Tiger Nut Flour. I’ve baked with chestnut flour before and had fantastic results, so I can only imagine baking with a similar tasting flour would be awesome.
Thanks to Tiger Nuts for exposing me to a totally unique food! I never even knew these existed before.
