Spring is here! Days are getting longer! Fresh Produce is back! The sun is shining!
Trying to focus on alllll the good stuff right now plus things that we have control of because stressing about things that are out of out control will NEVER serve us long term.
One thing we have control of? Nourishing our bodies!
And that starts with the food we make for ourselves.
You all know I love sharing easy healthy recipes with you and today’s recipe is no different. It combines some of my favorite ingredients from Bob’s Red Mill PLUS zucchini for some added veggie nutrients in your day.
I actually love adding veggies to baked goods or, in the case of these Zucchini Bread Bites, no bake snacks!
Fresh zucchini, medjool dates, raw walnuts combined with whole grain instant oats and coconut flour from Bob’s Red Mill makes these bites packed with nutrients to carry you through your day.
They also have a fun, slightly green coloring to them from the fresh zucchini. But green food seems totally appropriate to me because March is the official start of spring!
Sure the weather still isn’t totally cooperating yet, but things are starting to shift and I am counting down the days until all the trees are green, the flowers are in full bloom, and the air is warm(er). Time to welcome back some color into this dreary grey/brown winter world!
The inspiration for these bites comes from my mom’s banana zucchini bread that she used to bake all the time when I was little. She hasn’t made it in years and since I wasn’t able to find my mom’s original recipe, I decided to come up with my own Zucchini Bread Bites to replicate my childhood favorite! And thanks to Bob’s Red Mill products…it was incredibly easy.
Zucchini Bread Bites

- Yield: 10 bites 1x

1/2 of a zucchini, grated
1/2 cup Bob’s Red Mill Rolled Oats (52 grams)
1/4 cup Bob’s Red Mill Coconut Flour (28 grams)
6–7 pitted medjool dates (about 107 grams)
heaping 3/4 cup raw walnuts (88 grams)
1/4 cup unsweetened apple butter
Grate a half a cup of zucchini. Squeeze out excess liquid using paper towels. Place all ingredients in a food processor and pulse until evenly combined. Remove mixture from food processor and divide into 10-12 equal sized bites by rolling the dough in your hands. Place in the refrigerator or freezer to set! Store in the refrigerator.
Zucchini bread bites that taste just like a fresh-baked loaf without any of the complicated bread making or baking. Just mix, form into balls, and satisfy though zucchini bread cravings in a pinch! They’re also gluten-free, vegan, and have no added sugar.
You could even add cocoa powder to the original recipe to make a version of Chocolate Zucchini Bread Bites! I don’t know why I didn’t think of that to begin with as I LOVE Chocolate Zucchini Bread as well.
Whether you make these in the spirit of St. Patrick’s Day or just to celebrate the oncoming of spring, you’ll love their tasty flavor and nutrient density. Fun to eat too! Which we all know is just as important. 😉
