Now that I have my 23andMe data to verify that I am mostly Italian (and hardly French at all despite my last name! ?)…I don’t feel so bad about expressing my love for the Italian cuisine.
On my 3 week trip to Europe when I graduated from college, the food I had in Italy was BY FAR the best. So fresh, delicious, and so simple yet flavorful compared to the faux-Italian we get at restaurants here at home. The best way to get real authentic Italian food I’ve found is to….GO HOMEMADE! Whether that’s going to my grandma’s house for a pot of fresh sauce or trying to recreate a classic dish on my own, nothing compares to a homemade Italian meal.
I’ll choose pasta over most things if we’re picking favorites in the Italian cuisine…but Chicken Marsala takes a close second as a non pasta based Italian dish.
Classic Chicken Marsala
Have you ever had Chicken Marsala?
It’s a simple chicken dish made from thinly cut chicken cutlets, fresh mushrooms, minced garlic and shallots, and of course, Marsala wine. I absolutely love it because the Marsala wine perfectly marries sweet and savory flavor to make the ultimate sauce! Traditional Italian versions of this dish are typically never served with pasta and when I make it I don’t serve it with pasta either. Veggies and rice are my go to sides!
Chicken Marsala for Clean Eaters
While classic Chicken Marsala is pretty simple already, I’ve swapped out some of the heavier ingredients, like butter, white flour, and oil for “cleaner” alternatives.
My recipe is totally gluten-free, low in fat and calories, and uses Greek yogurt and cornstarch to make the sauce creamier and thicker. Plus, the tang of the plain yogurt pairs deliciously with the sweet Marsala wine.

Ingredients
1 tsp chopped fresh rosemary
1 tsp sea salt
1/4 tsp freshly ground black pepper
1/2 tsp red pepper flakes
4 boneless, skinless chicken breasts (4–6 ounces each)
12 oz marsala cooking wine
10 oz sliced fresh mushrooms (you can get a mix of varieties if you’d like)
2 shallots, chopped
3 cloves garlic, minced
2 tsp Extra Virgin Olive Oil
4 tbsp plain Greek yogurt
1 tsp of cornstarch (optional for thicker sauce)
Instructions
Mix rosemary, sea salt, pepper and red pepper flakes in a bowl. Sprinkle spice mixture over chicken and set aside.
Add 2 tsp olive oil to a large skillet and heat over medium heat. Add mushrooms, shallots and garlic. Season with more salt and pepper. Cook until the mushrooms are soft and slightly browned. Add wine and simmer until sauce reduces to one third, about 20-25 minutes. Add cornstarch if using and remove from heat.
While the marsala sauce reduces, grill chicken for 8-10 minutes on each side or until cooked through. You can also bake the chicken if you don’t have access to a grill!
Once the sauce has reduced, turn of the heat and whisk in yogurt. Place chicken pieces on 4 plates and divide mushroom sauce between them.
