Hello hello, friends! Where has this week gone!?
Not only have we made it thru one of the major holidays of the season, but we’re already headed into December! Can you believe it?! Christmas will be here in no time and I can’t wait to celebrate with my friends and family.
Just a few more busy weeks of work to go before the big day! Speaking of work, I am off to LA for the next week for a business trip to work right alongside the CEO of our company. Should be fun and very productive! Plus, I am excited to escape the cold that has already set in for the season in Buffalo. I am a California (or rather a HOT weather) girl at heart for sure.
So as I am traipsing around the West coast for the next week, I am sure a lot of you will be decorating for the holidays, buying presents, and attending more holiday parties! This really is the best time of year, isn’t it?! It’s just so full of love and community.
I personally love attending holiday parties. I wish we had more excuses to throw random get-togethers all year round, to be honest! So we must take advantage of it during this time of year.
Of course, it’s always nice to bring something when you’re attending someone else’s shindig. Whether it’s a host gift or a dish for everyone to share, bringing something is always a nice way to show your appreciation for the hospitality you’re receiving for the night.
While I love making fancy appetizers that impress sometimes you just don’t have the time to put together extravagant hors d’oeuvres when you’re invited somewhere last-minute or have a busy week at work. That’s where my latest recipe comes in.
It’s the perfect, simple, throw-together appetizer that TASTES amazingly gourmet and delicious, yet is easy to assemble in minutes! Inspired by the flavors of the season and the new Pink Himalayan Crackers from Back to Nature, I created Vegan Cranberry Cream Cheese with Crackers.
They’re the ideal mixture of creamy, crunchy, tangy, and sweet that we all crave in a pre-feast snack!
- 1 box of Back to Nature Pink Himalayan Crackers
- 1 container Kite Hill Plain Cream Cheese
- 1 14oz can of whole cranberry sauce
- 2 small pears, thinly sliced
- toasted walnuts, chopped
- In a food processor, combine cream cheese and cranberry sauce. Puree until smooth. Spread cream cheese mixture onto crackers, top with a slice of pear, and sprinkle toasted walnuts on top! Repeat the process with remaining ingredients.
100% vegan, made with 5 simple ingredients, and SO EASY to make….you have no excuse not to bring something healthy AND delicious to your next holiday party. The combination of sweet pears and cranberries with the tangy creamy cheese goes amazingly the crunchiness of the toasted walnuts on top. Plus, the crackers have JUST the right amount of sea salt flavor within them to create a perfectly sweet n’ salty snack food experience. Take my word, you won’t be able to stop at just one!
