National Pasta Month has arrived, friends! Sure, we’re already a few weeks into it, but that’s no excuse NOT to start celebrating!
I am a pasta lover. Blame it on my Italian roots or the fact that I grew up eating my grandma’s homemade sauce at least twice a week, but pasta will ALWAYS be a comfort food for me.
Whether it’s red sauce, a creamy rich mac n’ cheese, or an herby pesto with grilled seafood…I love it ALL!
There is something so comforting about diving into a big bowl of pasta. And it’s pretty fun to eat as well! So many different shapes and varieties to choose from. You could literally have pasta all week-long and NEVER have the same type or topping. You can’t say that about many foods!
Another thing I love about pasta? The convenience. In most cases, you’re less than 10 minutes away from pasta perfection (even less if you like it al dente like me!). Since today is #TortelliniTuesday (yes I am making that a thing…move over TACO TUESDAY!!!). I’ve decided to share a new pasta sauce recipe I created for fall that pair amazingly well with Three Bridges Spinach and Cheese Tortellini!
You know I love my pumpkin recipes…so of course, I had to make a pumpkin based pasta sauce for National Pasta Month. And this one is just as simple and easy as making the pasta itself! Check it out…

Ingredients
- 2 packages of Three Bridges Spinach and Cheese Tortellini
- 1 can organic pumpkin puree
- 1 tbsp coconut oil, melted
- 1 cup unsweetened cashew milk
- 1 tbsp date sugar
- 1 tsp garlic powder
- 1 tsp onion flakes
- ½ tsp cinnamon
- ½ tsp thyme
- ½ tsp cumin
- ½ tsp chili powder
- ¼ tsp cayenne powder
- ¼ tsp salt
Instructions
- Prepare tortellini according to directions on the packaging. Meanwhile, in a small saucepan combine all ingredients. Stir to combine and heat on medium/low heat until the sauce starts to bubble slightly and is fully warmed (about 10 minutes). Serve sauce on top of cooked tortellini. Garnish with roasted pumpkin seeds if desired!
Slightly sweet, slightly savory, and with a nice kick of spice…you will LOVE serving this sauce over your favorite pasta for a seasonal weeknight meal. I recommend Three Bridges Spinach and Cheese Tortellini of course! But I might be a bit biased…it is my favorite pasta of the moment after all. 😉 Three Bridges foods are available at natural food and grocery retailers nationwide including Safeway, Raley’s, Target and more.
Pasta meals don’t have to be heavy or overly indulgent. This creamy pumpkin based pasta sauce (which is vegan and gluten-free, in case you didn’t notice!) is rich tasting and SO flavorful without any crazy high calorie ingredients. Everything that goes into it is easy to find and probably already has a home in your kitchen/pantry! So there is NOTHING stopping you from making this festive fall meal ASAP. Especially since it’s National Pasta Month and all! 🙂
